Nigerian Beans Porridge — Ewa Oloyin

Ingredients

  • Ola-Ola Honey Beans

  • Carotino Palm Oil

  • Tomatoes

  • Scotch bonnet peppers

  • Red onion

  • Bell pepper

  • Crayfish or preferred protein/seasoning, optional

  • Bouillon or seasoning

  • Salt

  • Water

Directions

  1. Rinse Ola-Ola Honey Beans thoroughly and place them in a large pot with enough water to cover the beans generously.

  2. Bring to a boil, then reduce the heat and cook until the beans become tender.

  3. While the beans cook, blend the tomatoes, peppers, and onion until smooth.

  4. Once the beans are tender, add the blended tomato mixture directly to the pot. Do not drain the cooking liquid.

  5. Allow the beans and tomato mixture to simmer together so the flavors can develop.

  6. Add Carotino Palm Oil, along with crayfish or your preferred seasoning and bouillon, if using.

  7. Stir well and continue cooking until the beans reach a thick, creamy porridge consistency.

  8. Season with salt to taste.

  9. Let the beans rest for a few minutes before serving. The porridge will naturally thicken as it cools.
